Who doesn’t love a good lemon bar? It’s a perfect mix of powdered sugar and lemony sweetness in a bite. And the best part is, these tangy babies are so incredibly easy to make, and the ingredients are most likely already in your kitchen (or available on Breadfast ) On a bright, sunny day, or when I’m binging my next Netflix show after work, this is definitely one of my favorite recipes to whip up. Pair it with some earl grey tea, and you’ve got yourself a party!
Ingredients:

Crust
1 cup butter, softened*
½ cup white sugar
2 cups all purpose flour
*don’t substitute with margarine because you will get a stomachache! (I learned this the hard way)
Lemon Filling
4 eggs
1 ½ cups white sugar
¼ cups all-purpose flour
3 lemons, juiced
2 tablespoons lemon zest
Powdered sugar, for dusting
Instructions
- Assemble ingredients, and preheat oven to 175° C
- Mix together the softened butter, sugar, and flour until it is thoroughly blended. Press into the bottom of a 9×13 inch pan and chill for 10 minutes.
- After 10 minutes, remove the chilled crust from the refrigerator and bake for 15-20 minutes until firm and golden brown.
- In another bowl, whisk together the eggs, lemon juice, lemon zest, sugar, and flour.
- Pour the mixture over the baked crust, and bake for 30 – 35 minutes until the filling is set. The bars will become firm as they cool. Make sure they are at room temperature before cutting into squares and dusting with powdered sugar. Enjoy!
*Pro tip, for those of you who are willing to be patient, once your lemon bars have cooled to room temperature, place them in the fridge for another 10-15 minutes. The lemon bars will set and taste even better after being chilled!
