Chocolate Balah ElSham by Galaxy

Ingredients

For the dough

  • 2 cups (250g) flour
  • 1 cup water
  • 3 eggs
  • 1 tbsp (10g) cornstarch
  • 1/4 cup (50 ml) oil
  • A pinch of salt
  • 1 tbsp vanilla sugar

For the chocolate ganache

  • 2x Galaxy chocolate 80g
  • 1/3 cup (80 ml) heavy cream

For the syrup

  • 2 cups (400g) granulated sugar
  • 1 cup (240 ml) water
  • Juice of ½ lemon

Instructions

  1. In a small saucepan, mix the sugar and water. When the sugar is dissolved, let the sugar solution boil and stir. When it thickens slightly, add lemon juice and boil well. Remove from heat and let cool.
  2. In another saucepan, add water, oil, vanilla, sugar, and salt, and bring to a boil. Add flour and stir until dough is formed. Let it cool slightly.
  3. Once warm, add the eggs one by one while stirring continuously. Then, add the cornstarch and mix well.
  4. Fill a piping bag with the dough and pipe into preheated oil, cutting small pieces with scissors. Fry until golden brown and crisp.
  5. Remove from oil and immediately dip into the cooled syrup for a few seconds. Drain excess syrup.
  6. For the ganache, heat heavy cream until warm (not boiling), then pour over chopped Galaxy chocolate. Stir until the chocolate is fully melted and the ganache is smooth. Let cool to room temperature until it thickens slightly.
  7. Dip Balah Elsham into the chocolate ganache. Serve immediately and enjoy!
