Pasta Salad with Italian Dressing

Last year, I was invited to a summer dish party (how I miss those days), and I totally forgot about it until just two hours before. So, I needed something fast yet delicious because – well, I had no other options, and also because most of my friends are taste connoisseurs and they would’ve probably made dishes with hard-to-pronounce names. To my good fortune, I found out about pasta salad, and that was it. I took a deep breath, jumped in the kitchen and rolled up my sleeves.  

Prep Time: 30 minutes

Ingredients

Salad
1 fusilli pasta pack 
1 pack oriental sausage (cubed)
¾ cup sliced kalamata olives
½ cup sliced red onion
½ cup fresh and chopped parsley
3 cups cherry tomatoes (halved)


Italian Dressing
¼ cup water
2 teaspoon salt
1 tablespoon sugar
1½ cups olive oil
¼ cup white vinegar 
2 cloves garlic (I personally like garlic powder, if you do too, then it’s 1 spoon)
2 teaspoons of dry basil or oregano
2 green peppers 

 

Instructions 

  1. Cook pasta as usual.
    *Pro tip: add some oil for non-stickiness and a pinch of salt for extra flavor, and make sure to also save some of the pasta water (known as the cook’s “liquid gold”) to toss in your salad in case it feels too dry.
  2. Toss all dressing ingredients together and give it a proper shake
  3. Add everything else and let the flavor magic happen!
    *Pro tip: you can store it in the fridge for a couple of days. It’s criminally delicious!
